Southern Style Nachos Recipe

Southern Style Nachos By

- .5 cup Salt
- .5 cup Sugar
- 1 gal Water
- 10 # Turkey
- 1 pt Pimento Cheese
- .5 Heavy Cream
- 2 ea Medium Russet Potatoes
- 2 qts Frying Oil
- Salt and Pepper

Make a simple brine with the sugar salt and water.
Let you turkey sit submerged in the brine overnight.
Remove turkey from brine and smoke at 250 degrees for 4 hours, or until internal temp reaches 155.
Let cool and shred by hand.
Slowly heat heavy cream mixing frequently so it does not burn.
When almost at boil add pimento cheese and mix until no clumps of cheese and sauce is thickened.
Thin slice potatoes on a mandolin and place into water.
Rinse potatoes briefly.
Heat oil to about 350 degrees in a tall pot.
Fry potatoes until crispy and season with salt and pepper.
Place chips on a large platter and drizzle with pimento cheese sauce and smoked turkey.
You can always embellish on these simple southern nachos with jalapenos, beans, other meats.
